Saban Pot

INGREDIENTS

2 lbs salt beef, beef brisket
or salted pork

1 small cabbage

1 pound potatoes

2 sweet potatoes

2 tannias

6 ears corn  

3-4 christophines
*6-8 dumplings

1 pumpkin, cut into cubes

2 medium onions

1 yam, dasheen or other root vegetable

4-6 carrots

thyme and parsley to taste

METHOD

The meat must be washed, soaked and pre-cooked.

Add vegetables, the hardest ones first. Then add cabbage, carrots and *dumplings.

Cook in a very deep pot. Put enough water in the pot to cover all vegetables.

Put thyme and parsley on top.

Cook, covered for 20-30 mins.
* DUMPLINGS

1 cup all purpose flour

1/8 tsp salt

1 tsp baking powder (optional)

water

Put flour and salt in a bowl. Add enough water and mix, then knead to make a firm dough. Set it aside until ready to use. Divide the dough into small pieces, about 1 inch or according to your taste. Roll dough into balls or roll it into a pencil-like shape.

Drop it into soup.
